Lettuce From the Urban Garden Salad

I recently shared growing 16 vegetables, herbs and fruit in the city. At the time it looked as though the lettuce I planted in the ground was only a one time thing. This did not turn out to be so as the meal below is lettuce from the urban garden salad from my small backyard. 

This meal cost under $1.00. The lettuce is from the backyard as well as spearmint. The rest of the ingredients in this meal are items that I recently used for two other dishes which I will share in the future.

A salad of this high quality will be around $20.00, buying it from outside and likely not this abundant.

Meanwhile at home we can enjoy this meal without guilt. When you start growing your garden or if you are already building one, plant some lettuce in the ground.

All you need is the root of the lettuce, put it in water and let it grow some roots. Then plant it in soil and water it from time to time. You will have lettuce.

What you need to make lettuce from the urban garden salad

1 full plate of lettuce

1/2 cup spearmint 

1/4 cup red bell pepper

1/3 cup yellow bell pepper

1/2 cup cooked chickpeas

1/4 cucumber

2” slice goat cheese

1 tbsp salad dressing of your choice

Prepare Your Salad

Wash the lettuce and spearmint thoroughly. Pick off the leaves from the stem and rewash it before placing it onto your plate.

Then add the chopped spearmint, followed by cucumbers, red and yellow bell peppers. 

Afterwards pour some cooked chickpeas on the plate. These are chickpeas I made for another meal which will be shared in a future post.

Cut off a slice of goat cheese and add that on top of the chickpeas. The cheese can last for many meals as already shown in spinach and kale penne rose as well as the oven roasted sweet potato salad.

Then drizzle some salad dressing over the plate.

Your meal is ready. This is a filling, low cost-effective and healthy meal.

It is a great way to optimize the quality of food you eat.

You can eat healthy food in abundance even if you have just a little.

This meal costs less than buying a burger alone at any fast food chain, no combo.

I also hardly watered the area where the lettuce was growing because it is surrounded by spearmint that is growing wild and yet it still grew.

The water poured on the lettuce is mostly rain water from the sky. The rain water collected for the garden was not used in this area.
