Mixed Salad From The Backyard

The Fruits Of Our Labour are showing up. Now it is time to make use of what is ready to be consumed. Once vegetables are ripe, be prepared to gather your harvest. This mixed cruciferous salad from the backyard is just that. 

It may feel a bit overwhelming when you see your vegetables coming up all at once. Start picking them off right away as they ripen. Something as basic as a salad is great way to use what is ready to eat. It takes a little time to make. This meal is a simple mixed salad from the backyard.

Ingredients

a small handful of kale

3-4 leaves of fresh green collards

1 green bell pepper

8-10 leaves of chives

one handful of fresh peppermint leaves

1 carrot washed and chopped

1/4 red onion

2-3 leaves of romaine lettuce

a small handful of sunflower seeds 

1-2 tbsp your choice of salad dressing

The base of the salad are all items picked up from my urban garden. The items are, green collards, kale, green peppers, chives and peppermint leaves are the base of the salad. The few added extras in it are carrots, red onions, romaine lettuce and sunflower seeds.

Buying vs. Making It On Your Own

A small healthy salad in the grocery store is at around $6.00. This salad is less than $.50. The salad in the container is only half the amount showing on my plate in the picture below. 

With the green vegetables as my base for the salad, add a little colour by including some carrots and red onions. Mix in some romaine lettuce as it is easier to chew along with the kale and collards. Kale and collards are coarse and harder to break down. 

Lastly, top it off with some sunflower seeds. Choose a salad dressing you like. A light greek salad dressing is used for this plate.

Cleaning The Vegetables

As with any fruit and vegetable, wash everything first. Some of the collards have holes in them. We cannot stop that from happening. Bugs and insects crawl all over our garden. As much as we are growing a feast for ourselves, we are also giving some food to them. Therefore, make sure everything is thoroughly washed before you cut everything up. Fortunately, this year, the holes in my collards are very few compared to how the kale turned out last year.

Ingredients in The Salad

Once everything is thoroughly washed, cut up all the vegetables. This includes collards, kale, green pepper, peppermint, chives, carrots and red onion. Place it in a container and mix up all the contents. Afterwards, fill your plate with the mixed salad from the backyard.

There is no better cost effective fast food than this. It is healthy, convenient, abundant, tasty and delicious. It is also very easy to make and is ready within 10 minutes. 

Work on your garden to receive an abundance of food in your backyard ready to eat. The same green pepper growing in your backyard costs around $1.00 or more from the grocery store. For a bunch of kale and collards it is $4.00 or more per bunch.

It is good idea to have your own produce growing in your urban garden. Save your time and money going to the grocery store to buy food. Instead make the produce available steps outside your home. This produce will stops us from believing that eating healthy is expensive. You save a lot of money growing your own vegetables. 

One more thing, the sunflower seeds are approximately $5.00 for 2 large scoops. However, only 2 tablespoons are on this salad.

What Are The Benefits Of Kale, Collards And Green Bell Peppers?

Kale has vitamin A, K, B6 and C, calcium, potassium, copper and it contains manganese. One cup of kale is only 33 calories and 7 grams of carbohydrates.

Green collards are and excellent source of calcium, folate and vitamins K, C and A. Plus it is high in fibre and antioxidants.
