My pen name is Green Thumb, (real name on my cookbook) and I live in a city that is ever growing. After the year 2020, most of our lives shifted. I started to write online, sharing my small urban garden as well as DIY home renovations, perspectives on the future and making cost-effective, healthy vegetarian meals.
With this I decided to offer my first vegetarian cookbook for the new millennium. The recipes are simple and easy to make, starting from beginner level to intermediate e-card recipes as well as in paperback. The recipes are budget friendly and healthy.
My Cookbook Is An Investment Because It Teaches Us:

2. How to cut your grocery food budget in half by going vegetarian for life.

What Is The Purpose Of This Book?
A Solution To Rising Food Prices
With rising inflation and ever-growing concerns on how to feed millions in our future, what are some practical solutions to help people out? Several food banks have seen a drastic increase in the number of people needing support. However, how does this help them in the long run when we have to be fed every 4–6 hours a day? They take home a lot of food that is processed and not good for their health, yet they need it to survive.
Our way of living is shifting and food is a central part of this change. People cannot afford meat and many do not know how to make delicious, satiating, cost-effective healthy vegetarian meals.
At the start of this decade I realized there was going to be a food supply disruption in our future. Since then I started growing a small vegetables and herbs garden in my backyard in the Spring of 2020. My little garden was basic and it delivered a great yield. So much so that many recipes include ingredients from my backyard. For example, Pico De Gallo, Mint Chutney, Fenugreek And Chives Dip, Fenugreek Potatoes And Flatbread, Roasted Sweet Potato Slices, Green Collards Breadless Quesadillas, A Light Caprese Salad, A Homemade Pasta Sauce and more.
Within a short period of time the prices of food went up and as of today, they are not going down. Many people are not able to make ends meet and cannot even enjoy a decent healthy meal. This book offers recipes that are very low in cost and high in quality. You will learn the staples of vegetarian cooking and how to build from it gradually while keeping the cost low.

My book also includes a few recipes for Thanksgiving and a full North American Vegetarian Holiday Dinner for a large family or a group of friends at the end.
From the time I published this book to today I have lost 35 pounds. This book is good for weight loss, a preparedness book for when the going gets tough, going vegetarian, eating a lot while spending a little and looking and feeling better while managing your finances and saving money

If you do not have a garden, no balcony on your condo/apartment and cannot grow your own food, do not worry. Focus on the staples first like rice, lentils, kidney beans, green peas, roti, okra, turnips, sweet potatoes etc. Buy a pumpkin and make oven roasted pumpkin seeds, pumpkin pie and puree, bake your own bread and use more items in this book that are cheaper to buy than purchasing other expensive foods that increase your grocery bill. You will still receive an abundance of healthy options at a lower cost.
The more we become self-sufficient making our own homemade healthy foods, the greater our ability becomes to gain our power back.
