Tomato Basil Bread

This is a simple gourmet loaf of bread that will cost up to $15.00 in a local bread and bakery shop in my area. At home though this loaf of bread is around $2.00. The tomato and basil bread loaf is dense as each slice is filling.

These garden harvest sun dried tomatoes are homemade. Recently I used some to make a delicious sun dried tomatoes pizza. Now I can use them to make a delicious loaf of bread.

In a winter salad recipe I mentioned if that meal is not enough you can enjoy a side of cauliflower and leeks soup without cream.

Or you can enjoy this delicious bread with a bowl of cauliflower leek soup. The tomato basil bread is a savoury bread that goes nicely with soup.

Ingredients For A Tomato Basil Bread

8-10 leaves of fresh basil

5-6 slices of home made sun dried tomatoes

2 tbsp sesame seeds

1 tsp salt

1/2 tsp sun dried tomato infused olive oil

1 tbsp instant yeast

2 cups water

3-4 cups all-purpose flour

1 tsp olive oil

Making The Tomato Basil Bread

Take out a medium size bowl and put a few slices of sun dried tomatoes inside. Wash some leaves of basil and chop them into tiny pieces.

Put the basil in the bowl and sprinkle a little salt and pepper as well. Keep this to the side. 

In a glass container pour a little water and add some instant yeast. Put in two cups of all-purpose flour in the water and mix it.

Add the ingredients in the bowl on top of the partially wet dough.

Then sprinkle some sesame seeds on top.

To make it firm, add another cup of flour and kneed the dough. You may have to add one last cup until it is able to become a round ball.

In a glass container that is washed and dried, spread a little olive oil and then place the dough in the bowl, mixing it in the oil.

Poke a few holes in the bread and cover it up with a cloth.

After an hour the dough has risen nicely.  

What To add On the Bread

Take out a garlic bulb and pull off any peel from it keeping the bulb in tact. Using a knife cut the top portion off of the garlic so that you can see little holes at the top.

Wash the bulb and then add some olive oil, salt and pepper on top of the garlic. Wrap it in a small piece of foil. When you are ready, place the dough into a loaf pan.

Slide it in the oven once the temperature has reached 350 degrees F for 20 minutes, with the garlic bulb on the side.

Let both items sit for another 5 minutes after the oven is off. Take them out and wait for the bread to cool down while keeping the garlic to the side.

Cut some slices of the bread and open the foil of the garlic, placing two cloves per slice, spreading it along the bread.

I have extra basil so if you like, add some fresh basil on top of the garlic spread and top it off with some chopped onions and shredded cheese.

Place it back in the oven at 350 degrees F for 5 minutes. 

Meanwhile, warm up the already made cauliflower leeks soup without cream.

Once it st warmed up, pour some soup in a bowl.

Take out the bread and add it on your plate.

Dinner is served.
